Tortilla soup

Since Derek wanted to start blogging, I’ve been thinking about things I could add to the blog.  I’m not an especially good or creative cook, but I do have a few favorite recipes that always turn out well.  Sooooo I thought I’d share some here on the blog.

When cooking for Derek and myself, I try to change up the meals pretty often so we don’t end up eating the same things all the time.  This recipe for tortilla soup, though, is probably the one meal I’ve made more than any other since we’ve been married.  But hey, we like it and it makes us happy, so why not?

This tortilla soup was a favorite meal that Debbie, one of the missionaries in Ecuador, made for the summer interns.  When we all returned to the States, Debbie was kind enough to send each of us a recipe book with many of the meals she made for us and other favorites in their family.  So here it is, simple and delicious (and low-calorie!):

Tortilla Soup
1 med. onion, chopped                                     1 10 oz. can chicken broth
2 cloves garlic, minced                                     1 10 oz. can beef broth
2 T oil                                                                  2 C water
2 lbs. stew meat or round steak, cubed*      1 t ground cumin
1 5 oz. can tomatoes & green chilies             1 t chili powder
1 can tomato soup                                             1 t salt
2 t Worcestershire sauce                                 1/2 t lemon pepper
4 corn tortillas, cut in strips**

*I almost always use chicken instead of beef
**I use whole wheat four tortillas instead of corn tortillas

In a large pot, saute onion, garlic and meat in oil.  When meat is browned (or cooked through for chicken), add all other ingredients.  Simmer covered for 50 minutes.  Add tortilla strips.  Cook 10 minutes.  Pour in bowls and top each bowl with grated cheese and a dollop of sour cream, if desired.

 

To add more or less spice, adjust the amount of chili powder used.  If you really like a kick to your food, you can add some hot sauce.  Usually, if I know we’re going to be eating this as a leftover, I don’t put the tortilla strips in the pot.  You can just add them to each bowl so they don’t get soggy in the container of leftovers.

It’s crazy that we have less than 3 months until the big day!  As the day comes closer, we’re trying to finish up all the plans.  Liiiikkkkeeeee….

Flowers:
We decided on a florist!  We are going with Victorian Seasons in downtown Apex.  Before we went for the consultation, I was thinking that they’d be more expensive since they only do wedding flowers.  As it turns out, the price they gave us was very reasonable, and I think they’re going to get everything done with flowers without very much effort or time from us.  It’s nice to have that part of the wedding planning out of the way!

Catering:
We’re still making some decisions about catering.  We’ll have some snacks and finger foods for our guests to enjoy at the reception, and of course, our delicious cake!  We should be making some final decisions about the catering in the next week or so.

Invitations:
We’re making them!  I’m really excited about how these will turn out.  Check back in soon for some pictures.

Honeymoon:
Derek planned our honeymoon as a surprise for me.  Although it’s all planned, there’s not much I can say about it.  Ask me after we get back, and I can tell you where we went!

Oh, and in other news, I graduated! 

The next few months should be really eventful for us!

Wedding Cake!

I think my favorite part of wedding planning so far has been picking out our wedding cake!  We’ve had wedding cake consultations at three places: Edible Art, Blue Moon Bakery, and Cinda’s Creative Cakes.  It’s been really fun to look at different cake designs (you can do some crazy things with cake!) and of course, taste some cake flavors, frostings, and fillings. 

For anyone else getting married soon, I would definitely recommend Blue Moon and Cinda’s.  Blue Moon Bakery has some amazing cake.  When we went for our consultation, they brought out a platter with all their cakes, fillings, and icing so we could try different combinations, and everything was so good!  At Cinda’s we felt like she was really interested in making our wedding cake unique and special.  Cinda’s very personable and seems really creative and easy to work with. 

As for what we’re choosing for our cake, you’ll have to wait and find out… 🙂
Just make sure you come to the reception ready to eat something delicious!
